The furnace consists of two chambers. In the lower part of the kiln there is a combustion chamber where wood is burnt and in the upper part there is a meat chamber.

Topeltseinaga ahju puhul liigub puidu põlemisel tekkiv suits läbi topeltseinte üles korstnast välja.

Sellise ahju kasutamise puhul ei ole oluline, et põletatakse suitsutamiseks sobivat puitu. Põlemise suits ei saa lihaga kokku.

Tegu on n.ö. kuumsuitsuahjuga. Ülemises kambris tekitatakse suitsu laastuga, saepuruga või muu sarnasega.
