Ribeye cut from the back of the bovine animal, close to the rump, in the rib area.
In Estonian it is known as antrekooti, and in French entrecôte. The meat is obtained more precisely between the 6th and 12th ribs. This area accumulates more intra-muscular fat, resulting in a beautiful white fat network - marbling, which is what makes ribeye so distinctive and unique.
The rye is usually cut 2-3 cm thick.
The weight of one piece is 2-3kg.
