Best tips for cold smoking

Smoke chips
The lawn must be clean and dry. Damp chips will not burn properly. Keep the chewing gum in a dry room, if necessary dry it in a microwave oven (30 sec. on high heat) or in an oven (90 °C for 30 min.). If the chips do not burn evenly, use 20% oak chips in a layer.

Smoke chamber
The ProQ generator works in all BBQs with a lid and also in homemade smoke boxes. The chamber doesn't need to be airtight - you just need a slight movement of air from the bottom up.

Preparing for
Check that the generator is not damaged. Fill with chewing gum, tap on a flat surface, press gently and smooth the labyrinth with your finger along the centre, leaving the top layer slightly loose.

Censorship
Place a tea light or point a kitchen burner towards the flame in a corner. When the burner lights, remove the candle and let the generator burn outdoors for 5-10 minutes. Then place it in the smoke chamber and check after 30 minutes that the smoke has not gone out or jumped into the next duct.

During fumigation
Monitor the progress of the smoke, especially during the long process. Wear gloves when removing - the generator can be hot. Cold smoke at temperatures below 21°C, preferably at cooler times or at night.

Cleaning
Empty the ash into a non-combustible container. If resin or soot build-up occurs, soak the generator in soapy water, brush and dry thoroughly.
