Bulgogi (translated as "fire meat") is one of Korea's most famous dishes. It consists of thinly sliced beef (usually tenderloin or other soft cuts) marinated in soy sauce, sugar, garlic, sesame oil, onion and other seasonings. The meat is then pan fried or grilled. The result is a juicy, slightly sweet meat with an intense umami flavour.
Kalbi means "ribs" in Korean, and this dish is usually made from short ribs of beef. The meat is marinated in a similar way to bulgogi (but often a little longer) and grilled. Kalbi is popular at Korean BBQ parties - the meat remains tender and flavoursome, with a light caramelised crust.
Both are iconic Korean BBQ road, where marinades play an important role - and Bulgog sauces are at the heart of this flavour.
